Is there a specific reason to use luke warm water for kneading the dough? I remember for the khasta kachori you had used chilled water for the dough. How does the temperature of the water affect the dough and the final crust of the kachori/samosa…

garam marsala is just a mixture of spices.
A very basic garam masala could be made out of cinnamon, cardamom, cloves and nutmeg.
try using allspice it tastes a lot like graham Marsala.

BUT REMEMBER, garam masala is a mixed spice, with cinnamon, cloves, black pepper, cassia bark, fennel seeds, nutmeg and cardamon seeds both black and green.
