Chicken Tocino Recipe – Filipino Cooking
Today I’m gonna show you how to cook my version of Chicken Tocino. Tocino is bacon in Spanish and is traditionally made with cured pork belly. In the Philippines, it’s made with either pork or chicken. Old school practice for tocino uses sugar, salt and saltpeter with maybe a little pineapple juice for tartness. It’s then left to cure for at least 3 days. In some regions, the meat is actually fermented at room temp to achieve a sour flavour to the meat. In our recipe today, we will be making a marinade with a similar flavour signature, but with a lot less work. Recipe link: bit.ly Music: “Go” by Josh Woodward (www.joshwoodward.com)

A passion for food, freshness, value, quality and service are the benchmarks for gourmet food. You may find that this type of food is more expensive but you receive high quality products in return. That is worth the extra cost if you have a discriminating and discerning palate.
These specialist markets provide all fresh seafood, prime quality meats, high class groceries and pastries. The meats are often dry aged for about three weeks. This process reduces the water content and helps to provide the quality taste.

Catering services are available, too. Menus are wide ranging but they can provide party foods, such as crudites, pates, sliced meats, mini quiches, pastries and fruits. The standard is far superior to the standard finger buffet. Foie gras and truffles are available, too. All manner of events can be provided for as there is such a huge range of foods to buy. A special birthday party for a child, a business breakfast for clients or a celebratory book signing are just a few examples.
Gift hampers are a great idea for a special celebration. They make an unusual present, too. The hampers can be customized to the event for the client. Whatever foods you require, the gourmet market NYC will cater for your needs and you will be totally satisfied with the result.
